A Mother’s Sacrifice…


Unless you become one, only then you will understand… 

You may have heard this a thousand times already or might have gotten tired of being told as such. 

This phrase is actually, TRUE. I don’t give a damn of it growing up but it did made sense when I became… a MOTHER. 

I barely remember anything from my childhood. But I do know I had wonderful memories growing up.

I sometimes wonder how I am as a child… a baby… How my life was from the inside. How I was cared for from the very first beat of life gifted of me.

Or let’s just say it the other way around. 

How she's like as a mom? How her life was when she carried me for 9 months... and how I made her feel the very first time she knew I exist.  The very first time she laid her eyes on me.

How clichΓ© of me to asked such thing… right?

I love reminiscing the old days, whether good or bad; and sometimes find myself smiling, laughing or even crying. I never imagined that every experience will bring forth total happiness.
I am not perfect as a daughter and until now, I regretted a few decisions I did wrong from all these years. 

I’m just like the rest. 

Not everyone gets a chance to have someone they can call, MOM. I can’t imagine the pain… the sorrow… How they managed to live their life every single day. It isn’t easy and it takes a lot of courage. 

It never crossed my mind that life will be that hard on me too; in a different way. With what I’ve experienced, I remember what was told of me then… Especially when I made her feel miserable or when I’m lousy and careless… 

“You’ll understand it… once you're in my shoes.” 

Those words... I care less... It meant nothing for me before...

RIGHT... she is right... everyone is right...


IT ISN’T EASY. IT TAKES A LOT OF BRAVERY, DETERMINATION, PERSEVERANCE… you name it all… It takes a LOT OF EVERYTHING TO BECOME A MOM. I learned it the hard way. All the sacrifices you'll have to endure. The responsibilities you have to face. It will change you in any way possible. 

Motherhood will help you become a better version of you...

I considered myself lucky to have such a wonderful family. To have been blessed with such an amazing mama; and cared for as well by the people I considered as my second mom. 

To all the mothers out there…  Embrace the gift you have and be thankful for being blessed with such a role. It might be that hard sometimes and I know you’re almost in a verge of giving up. Keep the faith and love. Remember...

not everyone gets the opportunity to become one. 




 


I think the reason why GOD doesn't give us the chance to remember even a single thing when we're still a baby; it's maybe because HE wanted us to experience parenthood in a unique (unprepared) way. 
HE wanted us to expect the unexpected.
And learn valuable lessons along the way!

Birthday at Max's

Happy birthday to you... 

We celebrated a friend's birthday a month back. We went for church on a Friday and decided to eat at Max's Restaurant.   

You know how it feels when you're craving for something Filipino-ish? 

I think it's really a tradition for Filipino's to treat friends out when there's something special to celebrate. Especially those who spent most of their birthdays away from family.  

It's sad to think that you'll be spending another year ALONE... again...

So... why not keep it fun... spend it with friends... go out... eat out... ENJOY πŸ˜€


So there you go... a friend invited us for dinner at Max's. We had so much fun that day... We had our photos taken on a b-day frames... and of course... did a lot of groupies and selfies... 

I just wanted to share with you what he had for dinner... and I'm so glad I get to taste that  dessert I've been craving for months...

I've been craving for this so much... I was so happy when they decided to eat at Max's ♥

I am not even a fan of Ube and those close to me knows that. I just don't like how it taste when it's just ube-alone... You know? 
I like it if it's made as an ice cream flavor... a creme brulee... and that? πŸ‘† Is just like HEAVEN ♥

At first I thought I'm not gonna like it at all... It  looks like a milk sprinkled with ube haha But when I tasted it for the first time... I was like... 

  
That and my ultimate favorite Buko Pandan made my night ♥

Korean Fried Chicken in Honey and Peanuts





Korean chicken was first introduced to me by a friend many years back. And ever since I had a taste of it, i never went out of my way to say "It's one of my favorite chicken recipe."

BonChon Chicken has been my guilt-free treat resto since it served the Korean Chicken I so love. I know that there are a lot of Korean restaurants in the Philippines, but this particular resto is always close to my heart. 


My ex-bf (now my hubby) and I used to eat at this resto whenever we crave for fried chicken. Those happy memories

I've tasted dishes mimicking Korean's fried chicken and it didn't disappoint me at all; knowing that it isn't even 100% Korean. Just the taste of it makes me happy ♥


So, I decided to make my own version of it so I can cook it at home, any time  I want ♥


Recipe:


Marinate:

1/2 t salt
1/2 t pepper
1/2 t ginger powder
Corn starch

7 pcs chicken drumsticks


 ** Wash and dry your chicken drumsticks well and mixed with salt, pepper, and ginger powder. Then, coat the chicken with corn starch.


** In a deep fryer or cooking bowl, pour 3-4 cups of cooking oil. Heat it to prep for frying.


Note: Korean's chicken are fried twice to get that crispy and crunchy taste.


** Fry your chicken for 10 minutes the first time. What I did is, fried each side of the chicken for 5 minutes and turned over for another 5 minutes. Then, I took them out of the fryer and set it aside for 5-10 minutes to cool. 




After which, I lower the heat of the stove to medium then started to fry the chicken again for the second time. I did the same method; 5 minutes each side BUT, I did several turns until I got the crispiness I'm looking for.


Sauce:


2 T olive oil (or a regular cooking oil)

4 cloves of garlic
1 pc red pepper (depending on how spicy you want your chicken to taste like)
1/4 cup soy sauce
3-4 T honey
1 T vinegar
1 T honey mustard sauce
1 T brown sugar
Peanuts



In a different cooking pan, put 2 T of olive oil to fry the garlic and green pepper. Add the soy sauce and honey syrup. Mix well, then add the vinegar, honey mustard sauce and brown sugar. 






Taste your sauce first before adding the chicken to adjust the taste to your liking πŸ˜‰ 








Then, dunk your fried drumsticks to the sauce and mix well to evenly coat the chicken.




To add a twist into your dish, add a fried peanut ♥




I think I did pretty well... I tasted the sauce and I didn't expect for it to taste close enough to the BonChon chicken i love πŸ˜πŸ‘€ I was even surprised haha
