Chicken Adobo w/ ripe Mango | Adobo ala TataDear ♥







½ Kilo of Chicken cut into serving pieces
1 big Potato cut into cubes
1 whole Ripe Mango (Manggang hinog) cut into cubes
1 big Red Onion chopped
4 cloves of Garlic crushed and chopped
2 Dried Pepper Leaves (Dahon ng Paminta)
Mama Sita’s Coconut Vinegar (or any vinegar will do)
Fish Sauce (Patis)
Soy Sauce (Toyo)
Brown Sugar
Oil
Ground Pepper & Salt to taste


How to cook:
Sauté garlic and onion in a hot pan with oil. Add the chicken and let it sit for a couple of minutes. Turn the sides to make sure that it’s evenly cooked. Add 2 teaspoons of fish sauce, dried pepper leaves and cook for another minute. Add the vinegar and soy sauce then let it boil for 3-5 minutes. Add the potato then simmer for another 2-3 minutes or until the potato is tender. Make sure to lower the heat. Sprinkle it with ground pepper and salt. Add 2 tablespoon of brown sugar and the ripe mango.

Serve while hot ♥
